02 Process
Four steps, one room, eleven days from the dock to your kitchen. You can watch most of it from a stool at the counter on Washington Ave.
We cup a sample before we buy, then take the whole lot if it’s good. Twelve bags at a time, not two hundred.
Tuesdays and Fridays on a 12-kilo drum, by a person who still watches every single batch.
The hardest part is waiting 48 hours for the gas to settle. We wait.
Bags go out Friday afternoon. Yours sits on a shelf for two days, not in a warehouse for two months.
03 Cafés
Pickup orders are ready in about ten minutes. Every bag on this page is on the shelf at both bars.

04 Subscription
Pick a rhythm. We roast Tuesday or Friday, pack it the same afternoon, and it lands before you scrape the bottom of the last bag.

Skip a week, swap the roast or stop entirely from any email we send. No account to make, nothing to phone about.
First bag goes on the Friday truck. We’ll send the roast date and the grind we’d use — change either one by replying.
05 Wholesale
We wholesale to about a dozen cafés, two co-ops and one very good bakery. That comes with green-to-cup pricing, a dial-in session on your bar, and a standing Tuesday delivery you never have to chase.
Someone from the roastery will write back within a day with pricing and a sample box. If it’s urgent, the wholesale line rings the bar.
